Blue Oyster Stir-Fry
A quick, high-heat stir-fry that makes the most of Blue Oyster's dense, fan-shaped clusters.

Ingredients
- 250g Blue Oyster mushrooms, torn into clusters
- 1 tbsp neutral oil
- 2 cloves garlic, sliced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 spring onion, sliced
- Pinch of chilli flakes (optional)
Method
- Heat the oil in a wok or wide pan until very hot.
- Add the mushrooms in a single layer; resist stirring for the first minute to let them brown.
- Add garlic and stir-fry for 2–3 minutes until the mushrooms are golden at the edges.
- Add soy sauce and toss for 30 seconds.
- Finish with sesame oil, spring onion, and chilli flakes if using.
Blue Oyster’s dense, meaty clusters hold their texture well under high heat, which makes a fast stir-fry one of the better ways to show them off.
Storage: Keeps in the fridge for up to 4 days; reheat in a hot pan rather than a microwave to keep texture.
