Mushrooms

Pink Oyster

Vivid coral-pink rosettes that fruit fast and dramatically, with a delicate flavour best enjoyed the day you harvest.

Pink Oyster rewards a warmer room than most gourmet species and repays that warmth with speed — pins can go from barely visible to harvest-ready in under a week. Its vivid colour is also its biggest timing tell: it fades noticeably within a day or two of harvest, so plan to cook it the same day if you can.

Because it moves so quickly, small environmental issues (a dry patch of air, a few hours without fresh air) tend to show up fast — which usually makes it a good mushroom for learning to read your growing conditions.

Delicate, slightly tangyBest eaten fresh — flavour and colour fade within a day or two of harvest

Pink Oyster Grow Kit

A dramatic, fast-growing kit — vivid coral-pink rosettes ready within about a week.

The growing journey

  1. 01

    Colonizing

The block colonizes quickly in a warm room, turning white throughout.

    Usually days 1–5

  2. 02

    Pinning

Small coral-pink pins appear, often within days of opening the bag.

    Usually days 5–7

  3. 03

    Rapid Growth

Rosette clusters expand fast — often the quickest-moving stage of any species in this guide.

    Usually days 7–9

  4. 04

    Harvest

Harvest as soon as caps are fully formed — flavour and colour fade quickly after this point.

Usually as soon as the rosette is fully open and caps are still vivid pink

  5. 05

    Second Flush

A second flush is possible but often smaller and less reliable than the first.

    Usually 7–10 days after harvest

From growers

Real photos and notes from people growing Pink Oyster, shared from their My Grow dashboard.

Jane, London

Smaller second flush than I hoped for, but still a nice bonus harvest.

Ben, Norwich

Second flush came in almost as big as the first — really happy with this kit.

Lucia, Sheffield

Soaked the block like the guide said and got a smaller but very welcome second flush.

Freya, Brighton

Used a clean knife to cut it free rather than twisting — worked really well.

Noah, Cardiff

Twisted the whole cluster off in one go, exactly like the guide described.

Aisha, Glasgow

Harvested this beauty a day earlier than planned since it looked ready. So glad I didn't wait.

Tom, Leeds

Checking on this daily since it's moving quickly — doubled in size in a couple of days.

Priya, Manchester

Humidity tent seems to be doing its job — really pleased with how full it's looking.

Marcus, Bristol

Growing so fast now — genuinely different every time I check on it.

Ben, Norwich

Pins were a bit slower than I expected, but a bit more humidity got them going.

Lucia, Sheffield

Fanned the opening a few times a day like recommended and pins appeared within days.

Sam, Belfast

First pins showed up right on schedule! Kept it misted twice a day and it took off from here.

Sam, Belfast

Left it alone in a warm cupboard like advised — colonized evenly, no dry patches.

Freya, Brighton

About a week in and the whole block looks solid white now, no odd colours anywhere.

Noah, Cardiff

Substrate's gone fully white and smells earthy — right on track so far.

Frequently asked

Is white fuzz on my grow kit normal?

Yes, in almost all cases. White, cottony growth in the first two weeks is mycelium — the mushroom itself — rather than mould. Genuine mould usually shows colour (green, black, pink) rather than staying white. See the full guide on reading white fuzz for the specific signs to watch for.

Why are my mushroom stems long and pale instead of short and broad?

This is almost always a fresh-air issue, especially common with oyster mushrooms — not enough air exchange causes long, pale, "leggy" stems and small, curled caps. Fanning the opening a few times a day usually corrects the shape of the next flush. See the full guide on fresh air and shape for more detail.
